Garlic and Parsley Eggplants


500g eggplants
1 clove of garlic
15-20g parsley leaves
40g extra virgin olive oil
Black pepper

  • Wash eggplants and cut them into mid sized cubes. Put them in a drainer and sprinkle with some salt. Let them rest for 30 minutes
  • Chop garlic and parsley for 5 seconds on Speed 7
  • Add oil and rinsed-drained eggplants. Cook for 15 minutes at 100°C on Reverse / Soft Speed.
  • Adjust salt and peper and serve into plates
  • You can serve warm or cold
