Sweet Potato Frittata

I heard a lot about sweet potatoes, saw on the shelves of a couple of supermarkets, mostly in organic food shops however I had never cooked or even tasted myself until I saw the attractive Sweet Potato Frittata recipe of judydawn, one of the most active members of Forum Thermomix.

I've recently bought some sweet potatoes. Since I didn't remember how much exactly I needed so I wanted to make it sure by buying 1.5 kilos :) It turns out all I needed was around 400 grams. I am happy that I purchased in abundance anyway because we did enjoy the dish and I cooked it twice in a short period of time and still have potatoes for one last time.

You can serve it warm or cold according to your preference. This flexibility also gives you the chance to serve it as a very practical finger food for your parties and invitations.


Ingredients:
60g Arborio rice (I used Ribe rice that I had available at home)
1 litre boiling water
5g parsley leaves, washed and dried
50g mozzarella, roughly chopped
50g parmesan, roughly chopped
2 eggs
75g milk
1 clove of garlic
15g shallot
10g extra virgin olive oil
Zest of 1 lemon (without the white)
1 large sweet potato, cut into 6mm slices (mine weighed around 400g)
Salt, pepper

My Granny's Omelette

My dearest granny (rest in peace) would make us this delicious omelette. I would make it more often in the past. Since cholesterol data became a part of the equation I tend to make it every once in a while now.

My beloved granny would make it with less ingredients. She wouldn't use neither parsley nor tomatoes. Only a nice piece of cheese would do it.

The recipe is very flexible and practical, I prepare my omelette with various ingredients depending also what I have in the fridge.

I most often make it as below:

Ingredients:

5-10g parsley leaves
2 eggs
10g milk
5g flour
A pinch of salt
Black pepper
10g feta cheese

Olive oil

Filling:
50g feta cheese, crumbled
10 pitted olives, chopped
10 cherry tomatoes, chopped

I'd like to let you know that I won't be posting any recipes for a while because of holiday. Since my last post will remain on the homepage for 3-4 weeks I decided to post these pancakes to colour the blog during my absence ;)


It might not be possible for me to reply your comments and messages as fast as usual.

These pancakes are perfect to colour your tables
It was inevitable for me to try this recipe which I fell in love with as soon as I saw on Helene's blog

Helene gets the recipe from a Spanish blog. Another Spanish blog gives it a colourful touch. Thanks and conguratulations to everyone for their unique work and effort

It is an easy recipe and don't take much of your time
You surely don't have to prepare all three colours at the same time. Depending on how you would like to serve them and for how many people, you can make only one or two. However it is for sure that making all three would bring a riot of colours to your table


For coloring you can use beetroot, spinach and carrot
Helene steams all in Varoma as you can see here
I had some cooked beetroot already so I didn't have to steam it
I didn't have fresh spinach so I used frozen one. I cooked in microwave oven
I steamed carrots in Varoma


How and where you'd like to use this recipe depends on you. It does have a wide area of use. You can serve for breakfast, or together with dinner, even at picnic...

Bauletti

I made these bauletti when when we had Stefano's colleagues for lunch. I prepared crepes and bechamel the day before. I had some rough knowledge about how to make bauletti however, since it would be the first time and in order to have great results, I asked for some help from my mother in law Lucia who is smiling us from the picture above ;) We prepared cheese mixture and the rest together. And the result? It was a huge success!



Crepes

500g milk
200g flour
40g melted butter (cooled down at room temperature)
4 eggs (each is around 60g)
A pinch of salt


  • Blend all ingredients for 30 seconds on Speed 5
  • Put crepe mixture in a bowl and let it rest for 30 minutes at room temperature
  • Transfer it into the fridge and let it rest for 1 hour


Bechamel
500g milk
50g flour
25g butter
1/2 tsp salt


  • Cook altogether for 7 minutes at 90ºC on Speed 4
  • Transfer it in a bowl and let it cool down


  • Put a little oil in a pan and warm. 
  • Pour 1/2 - 1 ladle of crepe mixture and quickly move pan around, so that batter spreads evenly, covering the whole surface with a thin layer.
  • Cook both sides, set aside and continue with the rest. 
  • Make sure your crepes are not thick. It is hard to give exact measures at this stage, it depends on several factors such as how big the laddle is, how wide the pan is and also one's hand
  • I got 17 crepes with 18cm diameters. You can increase the number of the crepese by making them even thinner than I did. But as I said before don't let them be thicker
  • You can prepare crepes and bechamel the day before (I did so)

Cheese mixture

150g parmesan -roughly chopped

250g 2-3 types of desired cheese -roughly chopped (Edam, Emmental, Gruyère, Caciocavallo, Provolone, Leerdammer, Maasdam, Kasseri, Gorgonzola, Asiago, Gouda.... etc)

500g mozzarella -roughly chopped
2 tbsps bechamel
Salt

  • Grate parmesan by speeding up from 2 to 9 for 15 seconds and set aside
  • Place desired cheese kinds and chop for 5 seconds on Speed 6
  • Add mozzarella, 2tbsps bechamel, salt and half of grated parmesan. Mix for 10 seconds on Speed 6
  • Check salt. Add if needed

  • By the way check salt of bechamel as well. Add salt if needed and mix

  • Cover trya with baking paper. Spread a little of bechamel on baking paper
  • Divide and place cheese mixture in the center of the crepes

  • Fold them in quarters as in the picture, place them in the tray with folded side down


  • Spread the remaining bachamel on the crepes and sprinkle with the remaining parmesan

  • Bake them in preheated oven at 180ºC for 35-40 minutes

Afiyet olsun...


Unfortunately I forgot to photograph them cooked! Since we had them all there were no leftovers. I update this recipe with a nice picture when I make it again ;)

Oven Baked Crepes with Cheese and Vegetables

Crepes (for 6)
100g flour
2 eggs
250g milk
30g butter (melted and cooled at room temperature)
A pinch of salt
Olive oil


Preparing crepes
  • Put milk, flour, eggs and salt in TM Bowl and mix for 20 seconds on Speed 4
  • Set it for 10 seconds on Speed 4. Start and pour butter through the hole of TM Lid
  • Transfer it into a bowl and keep in the fridge for 1 hour
  • Put a little oil in a pan and warm
  • Pour 1 ladle of crepe mixture and quickly move pan around, so that batter spreads evenly, covering the whole surface with a thin layer.
  • Cook both sides, set aside and continue with the rest (I prepared 22cm diameter crepes)



Filling
200g parmesan, roughly chopped
250g mozzarella, roughly chopped
300g green peas
150g carrot
150g zucchini
30g extra virgin olive oil
50g onion, quartered
Butter
Salt, pepper

  • Grate parmesan by speeding up from 2 to 9 for 20 seconds. Set aside
  • Chop mozzarella for 5 seconds on Speed 5. Set aside
  • Put 1 litre water in TM Bowl and bring into boil for 10 minutes at 100ºC on Speed 1
  • In the meantime, cut carrots and zucchini (I cut them into strips)
  • Place peas and carrots into Varoma Bowl, and zucchini into Varoma Tray. Steam for 20 minutes at Varoma Temperature on Speed 1

  • Season steamed veggies with salt. Empty the TM Bowl
  • Chop onion for 3 seconds on Speed 7. Scrape down the sides with spatula
  • Add oil and cook for 5 minutes at 100ºC on Speed 1
  • Add steamed veggies. Mix for 50 seconds on Speed 3-4
  • Add mozzarella and 150g of parmesan, mix with spatula. Adjust the salt

  • Spread the filling over the crepes leaving 1-2cm from the ends. Sprinkle with a little parmesan

  • Fold each crepe in half and then half again to form a quarter circle as in the picture and place them in baking tray

  • Sprinkle with a little parmesan. Place 1/2-1 tsp butter on the top. Bake in preheated oven at 200ºC for 20-30 minutes. (You may turn the grill on for 5 minutes if needed)
