Pasta and Peas with Stuffed Zucchini


Stuffed Zucchini
10g parsley
40g bread crumbs
50g parmnesan
3 big zucchini (my 3 came 600g in total)
50g prosciutto cotto or mortadella
1 egg

Pasta and Peas
40g extra virgin olive oil
30g spring onion
50g pancetta or sausage
300g green peas
250g tomatoes (peeled & seeds removed)
850g water
1 tbsp Thermomix stock concentrate
250g ditaloni

  • Place parsley, parmesan and bread crumbs in TM Bowl and mix for 10 seconds on Turbo Speed
  • Slice zucchini in half lengthwise. Scrape out the insides.
  • Add the insides of zucchini, pancetta, egg, salt and pepper in TM Bowl. Mix for 20 seconds on Speed 5
  • Stuff zucchini with the mixture and place them in Varoma Bowl and Tray

  • Put oil, onion and prosciutto in TM Bowl. Cook for 3 minutes at 100ºC on Speed 4
  • Add tomatoes. Mix for 5 seconds on Speed 5
  • Add water, Thermomix concentrate and peas. Place Varoma. Cook for 25 minutes at Varoma Temperature on Reverse/Speed 1
  • Remove Varoma and add ditaloni in TM Bowl. Place Varoma back on the top of TM Bowl. Cook pasta at Varoma Temperature on Reverse/Speed 1 for the time indicated on the package
  • Serve pasta and peas into the plates
  • Transfer zucchini into a serving tray and bring them to the table as well

As for nutritional values which I've been trying to include in my latest posts...

According to the book this serves for 6. However, (I don't know if that day I was extremly hungry or the portions are really smaller than my standarts) it didn't seem quite enough to me for 6 people. In my opinion it could be sufficient to serve for 4, 4 1/2 or the most 5 people :)
