Ramadan Pide is a traditional bread which is consumed mostly in Ramadan month in Turkey. With the ingredients below you can have 2 pides
300g water
25g fresh yeast
570g flour
5g salt
20g honey
35g yogurt
35g margarine or butter
1 egg yolk
1 tbsp water
Nigella, sesame seeds
1 cup of boiling water
- Warm water for 1 minute at 37°C on Speed 1
- Add fresh yeast and honey. Mix for 5 seconds on Speed 5
- Sift in flour. Add yogurt, margarine and salt and knead for 4 minutes
- You will have a soft and wet texture dough. Put it in a deep bowl. Cover with plastic film and let it rise 1 or 2 hours. (in summer it takes less, in winter more)
- Get 2 tart tins (I used 28cm diameter tins, also 25cm would be ok) Sprinkle with some flour
- Divide dough into two pieces
- Place one in the first tart tin. Flour your hands. Spread and flatten out dough to cover tart tin. Do the same also for the second one. Let it rise for 30 minutes more
- Slightly beat egg yolk with 1 tbsp of water and brush over your pides
- Sprinkle with sesame and/or nigella seeds
- Place 1 cup of boiling water at the back corner of your oven which is preheated at 250°C. Bake your pides for 15-20 minutes until they are browned
