While trying new recipes sometimes I can't figure out how some would result. I was curious about this one as well. Traditionally we are not much used to use chicken together with fruits such as apple. Both Stefano and I enjoyed it! I hope you like it too.

700g chicken breast
Flour
2 red onions (150g)
20g extra virgin olive oil
200g water
1 tbsp Thermomix stock concentrate
10g parsley leaves
1 bag of saffron (mine was 0.1g)
5g finely chopped ginger
Salt, pepper
200g apple
200g pear
- Chop chicken into mid size cubes and coat with flour
- Chop 1 of the onions for 5 seconds on Speed 5-6. Scrape down the sides with spatula
- Insert 'Butterfly'. Add oil and chicken. Cook for 3 minutes at Varoma Temperature on Reverse / Soft Speed
- Add water, Thermomix stock concentrate, parsley, saffron and ginger. Cook for 20 minutes at 100ºC on Reverse / Soft Speed
- Cut the remaining 1 onion into thin slices. Add into TM Bowl and cook for 5 minutes at Varoma Temperature on Reverse / Soft Speed
- Peel apple and pear, cut into slices. (My apple and pear were large so I cut them into thin slices and then halved every slice)
- Add apple and pear. Cook for 10 minutes at Varoma Temperature on Reverse / Soft Speed
- Serve into plates
