Cream of Asparagus Soup


50g butter
50g onion, roughly chopped
500g asparagus, cleaned and roughly chopped
1000g water
1 tbsp Thermomix Stock Concentrate
100g flour
100g cream
50g grated parmesan
Salt (if needed)

  • Put onion and 25g of butter in TM Bowl. Cook for 3 minutes at 100ºC on Speed 4
  • Add asparagus and chop for 10 seconds on Speed 9
  • Add water, Thermomix concentrate and flour. Cook for 15 minutes at 90ºC on Speed 4
  • Add cream, parmesan and the remaining 25g of butter. Mix for 10 seconds on Speed 3-4
  • Check out salt, add if needed
  • Serve into bowls
