Lentil Soup with Milk


120g onion, quartered
170g red lentils
40g rice
10g olive oil
40g Thermomix vegetable stock
1200g water
150g milk
30 butter and margarine
Red pepper flakes if you like hot stuff otherwise paprika
Dried mint

  • Chop onion for 3 seconds on Speed 5
  • Add lentils, rice, olive oil, Thermomix stock concentrate and water. Cook for 35 minutes at 100°C on Speed 2
  • Blend for 1 minute on Speed 9
  • Add milk and cook for 10 minutes at 100°C on Speed 2

  • Just before you serve it, melt the butter in a small pan, add paprika and mix. 
  • Serve soup into bowls. Dress with sauce. Sprinkle with mint
