100g parmesan
500g minced meat
1 egg
100g prosciutto cotto (or mortadella, bacon...etc)
160g canned tuna (drained of oil so it would weigh around 100g)
15g capers
15 pitted olives (+ to decorate on the top if you wish)
4-5 sage leaves
4-5 basil leaves
2-3 bay leaves
2-3 sprigs of thyme (and/or oregano)
3-4 sprigs of parsley
2 cloves of garlic
20g butter or margarine
10gr olive oil
15g Thermomix vegetable stock concentrate
150g white wine
Salt, pepper
- Chop parmesan speeding up gradually from Speed 2 to 10 for 15 seconds. Get 1/2 MC of grated parmesan, set aside
- Add minced meat, egg, a pinch of salt and pepper onto the remaining parmesan in TM Bowl. Knead for 1 minute
- Place the mixture between two sheets of baking paper and roll out with a rolling pin
- Place capers, olives and tuna in TM Bowl. Chop for 3 seconds on Turbo
- Place prosciutto slices over the meat, spread tuna mixture on the top and sprinkle with 1/2 MC of grated parmesan
- Roll meat loaf. Close the ends nicely
- You can decorate with olive if you wish
- Put butter, oil, garlic, sage and basil leaves, thyme and parsley sprigs in a non-stick pan, place it on the stove
- When starts sizzling place meat loaf in the pan. Fry 3/4 minutes for each side until browned
- Melt Thermomix vegetable stock concentrate with wine and add
- Continue to cook for 15-20 minutes by turning around often to cook each sides
- Slice and serve.
