50g parmesan (roughly chopped)
5g parsley leaves
7-8 basil leaves
2-3 sprigs of thyme (leaves only)
1 shallot or small onion (50g)
2 cloves of garlic
40g extra virgin olive oil
4 anchovies (drained)
1 small dried hot chilli pepper / peperoncino (optional)
100g sun-dried tomatoes (drained)
50g white wine
20 black pitted olives
- Chop parmesan, parsley, basil and thyme leaves for 10 seconds on Speed 9. Set aside
- Start TM on Speed 6. Add and chop garlics and onion for a couple of seconds
- Clean down the dies of TM Bowl. Add oil, anchovies and chilli pepper if you like hot it hot. Cook for 5 minutes at 80ºCon Speed 1
- Add sun-dried tomatoes and chop for 20 seconds on Speed 8
- Add wine and olives. Cook for 5 minutes at 80ºC on Speed 1
- Mix the sauce with boiled-drained pasta. Serve into the plates
- Sprinkle with parmesan-herb mixture
