Banana Bread

220g water
100g milk
10g honey
20g fresh yeast
620g flour
100g wholewheat flour
200g banana
10g salt
50g butter or margarine

  • Warm water, milk and honey for 1 minute at 37°C on Speed 1 
  • Add yeast and mix for 4 seconds on Speed 4
  • Add both flours, banana, salt and butter. Knead for 5 minutes
  • Put dough in a deep bowl. Cover with plastic film and let it rise for 1 hour 
  • Divide dough into two pieces. Flour countertop and your hands. Roll half dough around 50-60cm long. Turn it around and give it a spiral shape as in the picture. Let it rise for 1 hour
  • Bake in preheated oven at 200°C for 30-35 minutes until browned on the top
