440g water
20g honey
20g fresh yeast
300g whole wheat flour
400g bread flour
20g extra virgin olive oil
10g salt
10g sesame seeds
10gr poppy seeds
10g linseeds
15g sunflower seeds
15g pumpkin seeds
And some extra seeds mixture to coat with
- Put water and honey in TM Bowl. Warm for 1.5 minutes at 37ºC on Speed 2
- Add yeast and mix for 4 seconds on Speed 4
- Add whole wheat flour and mix for 10 seconds on SPeed 6
- Sift in white flour. Add oil and salt. Knead for 2 minutes
- Add all the seeds and knead for 1 minute
- Close with Measuring Cup and let it rise in TM Bowl for 1 hour. (When I went back to the kitchen after 1.5 h passed, the situation was as below! :) )
- Get 80-85g pieces of the dough. Roll them over the seeds mixture. (Since the dough has a wet texture the seeds will stick quite easily)
- Place them on the baking paper covered tray (I obtained 15 rolls). Let them rise for 30 minutes
- Preheat oven at 200ºC. Place a cup of water in the oven at the back corner
- Bake them around 20-25 minutes
