I love this bread for breakfast and brunches. The recipe is from Io e il mio Bimby. I made a few modifications. Feel free to fill as you wish
Ingredients:
250g milk
250g milk
25g fresh yeast
10g sugar
550g flour
1 egg
50g extra virgin olive oil
10g salt
1 egg yolk (to brush on the top)
Nigella seeds, sesame seeds ... etc
Filling:
80g ham slices like speck (I used chicken sausage)
100g cheese like Asiago, Emmental...etc, roughly chopped
25 pitted olives
- Add sugar and yeast. Mix for 5 seconds on Speed 4.
- Sift in flour. Add egg, oil and salt.
- Knead for 3 minutes.
- Put it in a deep bowl, cover with plastic film and let it rise for 1 hour.
- After risen, roll out the dough with rolling pin about 45x50cm size.
- Cut it into 3 strips lengthwise.
- Chop sausage for 5 seconds on Speed 5, put it over the first strip.
- Chop cheese for 5 seconds on Speed 7, put it over the second strip.
- Chop olives for 5 second on Speed 4, put it over the third strip.
- Roll each one into a log shape carefully so that the filling wouldn't come out during baking.
- Plait simply like hair. Place it in oven tray that is previously covered with baking paper and Let it rise for 1 hour.
- Brush with egg yolk and sprinkle with nigella seeds
- Bake in preheated oven at 200°C for 30 minutes.
