250g milk
20g fresh yeast
10g sugar
200g wholewheat flour
350g all purpose or bread flour
60g extra virgin olive oil
1 egg
10g salt
1 egg yolk, slightly beaten
Poppy, nigella, sesame seeds
- Warm milk for 1 minute at 37°C
- Add yeast and sugar, mix for 4 seconds on Speed 4
- Add wholewheat flour. Sift in all purpose flour.
- Add oil, egg and salt. Knead for 4 minutes
- Get pieces from dough, roll and place them in oven tray which is preciously covered with baking paper
- Let them rise for 1 hour
- After risen, brush with egg yolk and sprinkle with poppy seeds, sesame or nigella as you wish
- Bake in preheated oven at 180°C for 20 minutes

Note: I needed mid sized sandwiches so I prepared 15 rolls in total and each weighed around 65g.
