Easy Veggie Bread

100g roughly chopped zucchini
55g roughly chopped carrots
60g roughly chopped celery stick
10g parsley leaves
7-8 basil leaves
100g yogurt
60g margarine
320gr all purpose flour
130g whole wheat flour
1 egg
10g baking powder
1/2 tsp baking soda
Juice of a 1/2 lemon
5g salt
Black pepper

1 beaten egg yolk (to brush on the top)
Nigella seeds
  • Chop zucchini, carrots and celery stick for 2 seconds on Turbo repeating 4-5 times
  • Put 2 layers of paper towel in a drainer and drain the veggies by squeezing with your hand
  • Chop parsley and basil for 3 serconds on Speed 7. Repeat if needed
  • Put drained veggies back in TM Bowl. Add yogurt, margarin, egg, lemon juice, all purpose flour, whole wheat flour, baking pwder, baking soda, salt and pepper. Mix for 30 seconds on Speed 3-4
  • Knead for 3 minutes
  • Cover oven tray with baking paper. Put the dough in the tray. Give it an ellipse like shape (12x30cm about)
  • Make a lengthwise incision (not too deep)
  • Brush egg yolk on the top and sprinkle with nigella seeds. Let it rest for 15-20 minutes
  • Bake it in preheated oven at 200°C for 20-25 minutes

Note: In the original recipe there is leek instead of celery stick
