800g zucchini
50g bread crumbs
1 clove of garlic
10g parsley leaves
20g capers
200g canned tuna (drained)
15g extra virgin olive oil
Salt, black pepper
Tomato sauce or paste
- Cut zucchini in half lengthwise. (I had very big ones so I cut also widthwise)
- Scoop out the pulp and set aside
- Chop bread crumbs, garlic, parsley and capers for 2 seconds on Speed 10
- Add pulp of zucchini, tuna, oil, salt and pepper. Mix for 10 seconds on Speed 4
- Cover tray with baking paper and brush with a little oil
- Stuff the tuna mixture into zucchini and place in the tray
- Brush them with tomato sauce on the top
- Cook in preheated oven at 180ºC for 30-35 minutes
