Tuna Stuffed Zucchini

800g zucchini
50g bread crumbs
1 clove of garlic
10g parsley leaves
20g capers
200g canned tuna (drained)
15g extra virgin olive oil
Salt, black pepper
Tomato sauce or paste
  • Cut zucchini in half lengthwise. (I had very big ones so I cut also widthwise)
  • Scoop out the pulp and set aside
  • Chop bread crumbs, garlic, parsley and capers for 2 seconds on Speed 10
  • Add pulp of zucchini, tuna, oil, salt and pepper. Mix for 10 seconds on Speed 4
  • Cover tray with baking paper and brush with a little oil
  • Stuff the tuna mixture into zucchini and place in the tray
  • Brush them with tomato sauce on the top
  • Cook in preheated oven at 180ºC for 30-35 minutes
