Spinach au Gratin


500g frozen spinach
140g onion, roughly chopped
2 cloves garlic
20g butter or margarine

40g butter or margarin
50g cornstarch
500g milk
Salt, black pepper
20g grated parmesan
1 lemon peel (grated)

60g bread crumbs
30g grated parmesan

  • Grate all 50g parmesan for 30 seconds on Speed 7 and set aside
  • Chop onion and garlic for 3 seconds on Speed 5
  • Add spinach and 20g butter. Cook for 12 minutes at 100ºC on Reverse / Speed 1
  • After cooked, set aside and prepare sauce. Put milk, 40g butter, cornstarch, salt and pepper and cook for 7 minutes at 90ºC on Speed 4
  • Add 20g parmesan and grated lemon peel. Mix for 30 seconds on Speed 1
  • Add spinach back in TM Bowl and mix for 30 seconds on Reverse / Speed 1
  • Pour it into a deep casserole dish. (Mine was 26x15x6cm)
  • Mix the remaining 30g parmesan with bread crumbs and sprinkle on the top. Drizzle (or spray) with a little bit EVO and bake in 180ºC oven until the topping is browned. (Use grill option for last 5 minutes if needed)

In original recipe judydawn is using fresh spinach. If that's the case for you, you should include also following steps: 

  • Cut stems from spinach and chop into 1cm pieces. Set aside
  • Chop roughly spinach leaves and set aside
  • (Chop onion and garlic for 3 seconds on Speed 5)
  • Add chopped spinach stalks and butter. Saute for 5 minutes at 100ºC on Speed 1
  • Add chopped spinach leaves and cook for 5 minutes at 100ºC on Reverse / Speed 1
  •  The rest of the procedure is the same.
