1 onion (quartered)
15gr EVO
250gr roughly chopped potatoes
450gr frozen broad beans, thawed with skins removed and discarded
600gr boiling water
30gr Thermomix concentrated vegetable stock
100gr frozen peas
150gr roughly chopped spinach (I used frozen)
140gr milk
Black pepper, salt, nutmeg
15gr EVO

- Chop onion for 2 seconds on Speed 5
- Add EVO and saute for 4 minutes at 100ºC on Speed 1
- Add potatoes and chop for 5 seconds on Speed 5-6
- Add broad beans, boiling water and TM stock and cook for 15 minutes at 100ºC on Speed 1
- Add peas and spinach and cook for 10 minutes at 100ºC on Speed 2 (If you are using fresh spinach 5 minutes would be enough)
- Cover the lid with a tea towel and blend for 10 seconds speeding up gradually to 7
- Add milk, pepper, nutmeg and salt if needed
- Mix for 20 seconds on Speed 3

Note: You can add some more boiling water if you like a thinner soup
